Chocolate Chip Roasted Walnut Cookies
These are a plant based version of the classic cookie we all know and love. A perfect dessert or snack. The ultimate comfort food.

Dry Ingredients
- 2¼ cups organic all purpose flour
- 1 tsp baking soda
- ½ tsp fine sea salt
Wet Ingredients
- 1 cup vegan butter stick (not from a tub) I like Melt or Earth Balance organic vegan butter sticks
- ¾ cup coconut sugar
- ¾ cup maple sugar
- 1 tsp vanilla
- 1 cup coconut sweetened chocolate chips I use HU Gems available on amazon.com
- 1 cup chopped roasted walnuts (optional)
Add dry ingredients together in large mixing bowl and whisk. Set aside.
In a stand mixer mix wet ingredients well.
Add dry ingredients to wet ingredients and mix well.
Add in chocolate and walnuts and mix until just combined.
Refrigerate dough for 15 minutes.
Preheat oven to 350°
Using a medium cookie scoop place balls of dough on a parchment lined baking sheet.
Bake 10 to 12 minutes or until golden brown.
Cool on pan for a few minutes before removing.
- You can use whole wheat pastry flour in this recipe. It is a little more dense but completely delicious with a healthier twist.
