Chocolate Chip Roasted Walnut Cookies Plant Based

I have been making batch after batch of plant based chocolate chip cookies trying to find the perfect one. My husband’s favorite food is a cookie…any cookie!! He tried a cookie from one of the many batches and asked me if it was a savory cookie. Seriously? Needless to say that recipe is on the cutting room floor!
Chocolate Chip Roasted Walnut Cookies
These are a plant based version of the classic cookie we all know and love. A perfect dessert or snack. The ultimate comfort food.
Ingredients
Dry Ingredients
- 2¼ cups organic all purpose flour
- 1 tsp baking soda
- ½ tsp fine sea salt
Wet Ingredients
- 1 cup vegan butter stick (not from a tub) I like Melt or Earth Balance organic vegan butter sticks
- ¾ cup coconut sugar
- ¾ cup maple sugar
- 1 tsp vanilla
- 1 cup coconut sweetened chocolate chips I use HU Gems available on amazon.com
- 1 cup chopped roasted walnuts (optional)
Instructions
- Add dry ingredients together in large mixing bowl and whisk. Set aside.
- In a stand mixer mix wet ingredients well.
- Add dry ingredients to wet ingredients and mix well.
- Add in chocolate and walnuts and mix until just combined.
- Refrigerate dough for 15 minutes.
- Preheat oven to 350°
- Using a medium cookie scoop place balls of dough on a parchment lined baking sheet.
- Bake 10 to 12 minutes or until golden brown.
- Cool on pan for a few minutes before removing.
Notes
- You can use whole wheat pastry flour in this recipe. It is a little more dense but completely delicious with a healthier twist.
