Blueberry Kale Breakfast Smoothie

I created this recipe from a smoothie I became obsessed with. I travel all the time and one frequent layover is in the San Francisco airport. A restaurant called The Plant Cafe Organic is in the terminal I fly into and I always get their Green Banana Almond smoothie. I was craving it the other day and added some blueberries which made it even better which I didn’t think was possible! Such a refreshing breakfast on a warm summer morning. I sometimes make this smoothie in the morning and put it in my 24oz. Yeti insulated tumbler and have it hours later for lunch. (available at amazon.com)

Blueberry Kale Breakfast Smoothie
I love smoothies for breakfast in the summer when all the fruits are in season. This is a simple breakfast smoothie that is packed with nutrition and protein to start your day. I am a smoothie connoisseur (well, let's just say I drink a lot of them!) and this one is my current favorite.
Ingredients
- 2 cups chopped kale I prefer the curly kale in this recipe, I think it has the best flavor for a smoothie
- 1 cup frozen blueberries during blueberry season I freeze fresh ones to use in the smoothie
- ½ cup frozen sliced bananas
- 1 tbsp creamy almond butter
- 1 cup coconut water any plant based milk would work also
Instructions
- Place all ingredients in Vitamix or other blender and blend until smooth. You can add more liquid a small amount at a time to get desired consistency. I like mine thick and frosty so I just use 1 cup of liquid.
