Chocolate and Walnuts. End of story! These gems are a perfect grab and go breakfast for those busy mornings. They are also a perfect mid morning protein boost with a foamy soy latte.

Ingredients
  

  • 2 tbsp plant based milk
  • ¼ cup avocado oil
  • 1 cup mashed ripe banana
  • 1 tsp vanilla
  • 1 cup grated zucchini tightly packed
  • ¾ cup coconut sugar
  • 1 ¼ cups whole wheat pastry flour pastry flour keeps the texture lighter
  • cup cacao powder
  • ½ cup pea protein powder I use pea protein that has nothing added. Trader Joe's has one that is very good. There are many brands available also.
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ cup chopped roasted walnuts

Instructions
 

  • Preheat oven to 350° Place silicon muffin cups in muffin tin.
  • In large mixing bowl stir together plant milk, oil, banana, vanilla, zucchini, and sugar. Mix until blended together.
  • In medium mixing bowl combine flour, cacao powder, pea protein, baking soda, and baking powder. Mix together. Add the dry ingredients to banana zucchini mixture stirring well to combine. Add walnuts and stir in lightly.
  • Using large size cookie scoop fill muffin tin with batter. This will make 12 muffins.
  • Bake for 25 minutes or until toothpick comes our clean.

Chickpea Flour Crackers

Something pretty fun about making your own crackers! These beauties are so light and crispy. They are a perfect pairing with a soup for dinner or with Roasted Red Pepper Hummus as a snack. They are just fun to make and very easy.

After you roll out the dough, just cut into squares. I find a pizza roller works best.

Chickpea Crackers

These crackers are so easy to make and are full of protein. Fresh crackers are so delicious you won't want to buy them at a store again!

Ingredients
  

  • cup unbleached pastry flour all purpose flour will also work
  • ¾ cup chickpea flour
  • ¼ cup nutritional yeast
  • 1 tbsp maple sugar coconut sugar will work also
  • ¼ tsp sea salt finely ground
  • 1 tsp garlic powder
  • cup olive oil extra virgin
  • 7 tbsp water a little more is needed
  • 1 tsp sea salt flakes for topping

Instructions
 

  • Preheat oven to 325°. Line 2 sheet pans with parchment paper.
  • in a food processor add flours, nutritional yeast, sugar, salt, and garlic powder and mix.
  • Add in oil and pulse until mixture is a coarse crumb.
  • Slowly add in water until blended and dough forms a ball but is not sticky.
  • Divide dough in half and roll each piece out on a lightly floured surface into 12" x 12" squares about ⅛" thick. If the dough seems hard to roll, cover with a towel and let rest for a few minutes while the gluten relaxes a bit.
  • Use a pizza cutter or sharp knife to cut dough into 1½" squares. Transfer crackers to sheet pans by just pickpicking up the parchment paper with the rolled and cut dough and place it on the sheet pan.
  • Bake 10 minutes. Remove from oven and spray lightly with olive oil spray and sprinkle with sea salt flakes. Return to oven and bake for 5 to 10 minutes more or until golden. Remove from oven and transfer to a cooling rack. The crackers will break apart easily.

Notes

The crackers are very hearty and pare well with Follow Your Heart vegan Provolone cheese and Black Mission figs and grapes for an appetizer platter.  Store in an airtight container for up to a week.  These will keep nicely in the freezer for 1 month.

A couple of years ago I spend some time in Provence, France. I have been there several times and every time feels like I am going home. Needless to say I love the French food, culture, and the people. On the last trip with my family we were staying in Nice, which is famous for it’s Panesse. It is a heavenly concoction of chickpea flour, water, and salt. I couldn’t get enough of these tasty treats! Once back home I immediately went on a quest to learn how to recreate these in my kitchen. This recipe is delicious, but they always taste better sitting at a seaside table in Nice!!!

Panisses

Ingredients
  

  • 1 quart water
  • 2 cups chickpea flour
  • 1 tbsp olive oil extra virgin
  • sea salt
  • ¼ cup avocado oil grape seed oil or olive oil will work also (be careful with olive oil as it will burn quicker the the other oils)

Instructions
 

  • Heat the water on the stove to just before a boil. Add in the chickpea flour and olive oil.
  • Stir over medium heat with a whisk until mixture starts to get thick and bubbly, about 2 or 3 minutes. At this point I switch to a wooden spoon.
  • Cook, stirring constantly for another 8 to 10 minutes.
  • Remove from heat. The mixture will be very thick.
  • Pour into a parchment lined 8" x 8" pan. (you can grease the pan with a little oil if you prefer)
  • Cool to room temperature and then cover with plastic wrap and put in refrigerator for several hours or overnight.
  • Turn the molded dough and cut into pieces about 3" long by ¾ to 1" square.
  • In a heavy duty saute pan heat the oil (this may take more than the ¼ cup). When the oil is hot, place the panisses in the pan without crowding them. When they are nicely brown on one side turn and get all sides golden brown. Place on a paper towel to drain before serving.
