Multi Colored Potato Chips
Sometimes you just want a real potato chip. Wouldn’t it be nice to have them fresh, hot, and just the right amount just when the craving hits? Well, this recipe will give you all of that. It is such a simple process with healthy ingredients. It’s as simple as slicing the potatoes in a food processor or mandolin (a versatile kitchen slicing tool available at a good kitchen store or amazon.com).

Multi Colored Potato Chips With Sea Salt
These potato chips are so easy and fun to make. It is very empowering to be in control of what you are feeding your body. There are no additives or ingredients you can't pronounce in these chips!
Ingredients
- 1 bag of multi colored fingerling potatoes
- 1 tbsp extra virgin olive oil avocado oil will also work
- coarse ground sea salt to taste
Instructions
- Wash potatoes and dry with a paper towel.
- Thinly slice potatoes in a food processor or a mandolin*
- Place a sheet of parchment paper on a large microwave safe plate. Brush with the olive oil and place potato slices on the plate so that potatoes are not touching each other.
- Sprinkle with desired amount of sea salt and microwave for 3 to 4 minutes. Add more time if needed at 30 seconds each time until done making sure they don't get too brown. Let them cool to crisp up before eating.
