Peanut Butter Chocolate Chip Cookies

These quick and delicious cookies are packed with protein. I love the protein but the fact that is a cookie that I can eat and feel good about is the best part of this particular recipe. These are one of my favorite post run recovery foods. Lots of great carbs and proteins to refuel with.

Peanut Butter Chocolate Chip Cookies

Quick flourless peanut butter cookies with coconut sweetened chocolate.

Ingredients
  

  • 1 cup creamy peanut butter
  • 1 cup coconut sugar
  • 1 tbsp flaxseed meal mixed with 2 tbsp water and set aside for 10 minutes to thicken
  • 1 tsp baking soda
  • ¾ cup chocolate chips I use Hu Gems coconut sugar sweetened available at Amazon.com

Instructions
 

  • Preheat oven to 350°. Line a sheet pan with parchment paper.
  • Mix first four ingredients in a mixer and combine.
  • Fold in chocolate chips.
  • Use small cookie scoop to scoop out cookies on prepared sheet pan. Flatten cookies slightly.
  • Bake for 10 minutes or until golden brown on bottom of cookie. Cool on cooling rack.
