Chocolate Walnut Protein Breakfast Muffins

The secret ingredient for these decadent breakfast muffins is grated zucchini. It makes an incredibly moist muffin. Chocolate and Walnuts. End of story! These gems are a perfect grab and go breakfast for those busy mornings. They are also a perfect mid morning protein boost with a foamy soy latte.

Ingredients
  

  • 2 tbsp plant based milk
  • ¼ cup avocado oil
  • 1 cup mashed ripe banana
  • 1 tsp vanilla
  • 1 cup grated zucchini tightly packed
  • ¾ cup coconut sugar
  • 1 ¼ cups whole wheat pastry flour pastry flour keeps the texture lighter
  • cup cacao powder
  • ½ cup pea protein powder I use pea protein that has nothing added. Trader Joe's has one that is very good. There are many brands available also.
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ cup chopped roasted walnuts

Instructions
 

  • Preheat oven to 350° Place silicon muffin cups in muffin tin.
  • In large mixing bowl stir together plant milk, oil, banana, vanilla, zucchini, and sugar. Mix until blended together.
  • In medium mixing bowl combine flour, cacao powder, pea protein, baking soda, and baking powder. Mix together. Add the dry ingredients to banana zucchini mixture stirring well to combine. Add walnuts and stir in lightly.
  • Using large size cookie scoop fill muffin tin with batter. This will make 12 muffins.
  • Bake for 25 minutes or until toothpick comes our clean.
